Blessed are you, if you’ve ever sipped the nectar of the Puerto Rican gods – known as Coquito. Defined by Wikipedia as:
“Coquito meaning “Little Coconut” in Spanish is a traditional Christmas drink that originated in Puerto Rico.” *Dominicans also prepare their own version of it, and I don’t know for certain – but I’m sure it can be found in other Spanish speaking nations.

Coquito is really a homemade beverage, usually made by friends or family (of Puerto Rican or Dominican descent) – you have to know someone to acquire it in its most authentic nature. This creamy, coconut milk based rum cocktail is similar to egg nog (both are also traditionally heavily laden with dairy). I have only tried this drink as a youngin’, when I wasn’t fully vegan and it has been a long time since I’ve had it, until now!
I’ve discovered a vegan recipe for Coquito and although Puerto Rican hands will not prepare it, I have faith that it will still be bomb!
