RECIPE: Butternut Squash Spaghetti with Garlicy Marinara & Soy Chorizo with Peppers

Okay. As I have established on my social media, I don’t care for cooking – however, I am good at it. It just doesn’t bring me joy. I don’t even like cooking shows or hearing people talk about what they cooked. It’s boring for me. I can’t taste what people are talking about, so I get frustrated.

Anyways, some of you have asked how to make some of the things that I share on my Stories – so here it is!

INGREDIENTS NEEDED:  Spaghetti Squash and Marinara

*THIS IS VEGAN, SOY-FREE and GLUTEN-FREE!

Spaghetti Squash

Pasta Sauce (of choice)

 

INGREDIENTS NEEDED:  Fake Sausage and Peppers

Fake Sausage of Choice

Bell Peppers

Onion

Garlic

Mushrooms *optional

 

Start with a nice Spaghetti Squash. These things are so nice because you can bake them or throw them into an Instant Pot for quicker results (*7 Minutes). If you use a fork to shred them, they make delicious spaghetti like strings that are a fraction of the calories found in pasta.

 

Cut it in half…

 

Scoop out the guts and seeds…

 

Have some Pasta sauce and extras to pump it up. I like to add garlic to anything, so I added some cloves. I also like spice so I added red pepper flakes…but add or don’t add what you like.

 

I threw in some kalamata olives and spinach also! This is usually the time I long for having an Italian grandmother to just feed me her homemade perfect sauce.

 

Once done in the oven or Instant Pot, let cool.

 

I started on the fake Chorizo for the ?. I don’t eat soy and these Trader Joe’s Sausage-Less Sausage have soy and maybe some dairy. We had some mushrooms, garlic, bell pepper and onions which I threw into the mix.

 

I started to scoop out the spaghetti squash. This part is so satisfying!

 

Then I plated it and topped it with sauce!

 

Sorry, I don’t have photos of the Sausage and Peppers in the pan – but basically I sautéed the onion, garlic and then added the bell peppers and onions. Lastly I added the sausage.
